Here are photos of some of the pies I've made during the past month.
This one is a lemon chess pie.
And this one is a coconut cream pie. I used the recipe for the chocolate pie that I love. Just substituted coconut in place of cocoa.
This is the chocolate pie. I changed the recipe a bit by adding some espresso (powdered) and vanilla extract.
This is a Shaker lemon pie. The recipe is from a cookbook we saw at the Shaker Village at Pleasant Hill, KY some years ago. It has thinly sliced lemons (including the peels).
This is a quiche with spinach and bacon. We probably think sweet when the word pie is mentioned, but there are many savory pies.
